The region's diverse soils, ranging from clay-limestone to gravelly, provide the ideal conditions for cultivating this robust grape variety. The maritime influence from the Gironde estuary moderates the climate, ensuring a long, slow ripening period and resulting in wines with concentrated flavors and balanced acidity. Following a gentle destemming and crushing, the must undergoes a controlled fermentation in temperature-controlled tanks. Malolactic fermentation is carefully managed to soften tannins and add complexity. The wine is then aged in oak barrels for a period that varies depending on the vintage, allowing for a gradual integration of oak flavors and the development of tertiary aromas.
