Binyamina The Cave – Upper Galilee

The Cave is one of Binyamina Winery’s flagship wines, a premium Bordeaux-style red blend produced from selected vineyard plots in Israel’s Upper Galilee. The wine takes its name from the historic cave in the Carmel Mountains used by Binyamina for maturation, where naturally stable temperature, darkness and high humidity provide excellent conditions for aging wine.

Produced from Cabernet Sauvignon, Merlot and Petit Verdot, the varieties are harvested from low-yielding vineyards planted in the Upper Galilee’s dark basalt soils. Each variety is vinified separately and matured for 24 months in French oak barrels before the final blend is assembled. The wine then receives an additional year of bottle aging at the winery prior to release.

Full-bodied and concentrated, The Cave offers aromas of currant and ripe red and black fruit accompanied by toasted oak, vanilla and hints of chocolate. The palate is rich and velvety, with substantial but polished tannins, dark fruit, spice and oak leading into a long, persistent finish. Its combination of concentration, structure and extended maturation makes The Cave one of Binyamina's more age-worthy wines and a longstanding benchmark among premium Israeli Bordeaux-style blends.
