In 2013, Covenant expanded its wine production from California to Israel. Co-owners Jeff Morgan and Leslie Rudd were inspired by many new Israeli wineries and the terroir of the Galilee and Golan Heights. The landscape reminded them of both California and France’s Rhône Valley. And a winemaking home in Israel seemed like a natural choice.
Years ago in a restaurant in Bordeaux, I noticed that none of the wines on the menu were vintage designated. That is, the wines were listed without posting the years in which they were made. When I asked our server about the missing vintages, she replied, “They keep changing!” Indeed, each harvest brings a new vintage. So why worry about it?
