Hillrock Single Malt Whiskey is an estate-produced American single malt from New York’s Hudson Valley, crafted with a focus on terroir, traditional methods, and long, patient maturation. Made entirely from barley grown, malted, distilled, aged, and bottled on the Hillrock estate, this whiskey reflects a farm-to-glass philosophy that sets it apart from most American single malts.

The nose is rich and layered, offering aromas of malted barley, honey, baked apple, and gentle baking spice, supported by notes of toasted oak and vanilla. On the palate, it is rounded and elegant, showing flavors of cereal grain, caramel, orchard fruit, and soft spice, with a smooth, integrated oak influence that enhances rather than dominates the spirit.

The finish is long and refined, with lingering malt sweetness, light spice, and warm oak. Bottled at 48.2% ABV in a 750 ml format, Hillrock Single Malt Whiskey delivers a distinctly American expression of single malt—balanced, thoughtful, and quietly complex, appealing to Scotch drinkers and American whiskey fans alike.

Hillrock Single Malt Whiskey is matured using a multi-cask program rather than a single finishing cask:

  • Primary maturation: New, charred American oak barrels, which provide structure, vanilla, caramel, and toasted oak notes.

  • Secondary maturation: A portion of the whiskey is aged in ex-bourbon barrels, adding softness and allowing the malt character to remain front and center without heavy wine influence.

Unlike the Double Cask Rye, the Single Malt is not sherry-finished. Its cask program is designed to highlight malted barley, balance, and elegance rather than overt secondary flavors, resulting in a cleaner, more malt-driven profile with restrained oak influence.
