Made from rye grown, distilled, aged, and bottled entirely on the Hillrock estate, this whiskey is finished using a unique double-cask maturation that layers complexity while preserving a refined, elegant structure.

The nose opens with aromas of rye bread, baking spice, honey, and dried orange peel, followed by subtle notes of vanilla and toasted oak. On the palate, it is silky and composed, delivering flavors of spiced grain, caramel, light pepper, and a gentle herbal character. The secondary cask influence adds softness and roundness, smoothing the edges while enhancing the whiskey’s natural spice and sweetness.

The finish is long and balanced, with lingering rye spice, warm oak, and a touch of sweetness. Bottled at 45% ABV (90 proof) in a 750 ml format, Hillrock Double Cask Rye Whiskey offers a polished yet characterful take on American rye—equally compelling for sipping neat or showcasing in a refined whiskey selection.

Hillrock Double Cask Rye Whiskey is matured in two distinct types of oak:

  • Primary maturation: New, charred American oak barrels, where the rye develops its core structure—spice, sweetness, and body.

  • Secondary maturation (finish): Oloroso sherry casks from Spain, which add roundness, subtle dried-fruit notes, and a polished, slightly oxidative richness without overwhelming the rye character.

This double-cask approach is designed to soften the rye’s natural spice while layering in complexity and texture, resulting in a whiskey that is expressive and nuanced rather than overtly sweet or heavily wine-driven.
