Tomatin 2006 17 Year Old Pedro Ximénez — Sherry Collection

Tomatin’s 2006 17 Year Old Pedro Ximénez Edition is the oldest and richest of the distillery’s three-part limited-edition Sherry Collection, created to demonstrate the dramatically different effects of Manzanilla, Palo Cortado and PX sherry casks. Distilled in 2006, this whisky spent an unusually long eight years finishing in Pedro Ximénez sherry buttsbefore being bottled at 17 years old, giving Tomatin’s naturally soft, fruity Highland spirit an intensely rich sherry character.

The nose opens with sticky toffee pudding and espresso, leading to a lush palate of lemon curd, golden syrup, dates, dried figs and dark muscovado sugar. The PX influence becomes even more pronounced through the long finish, bringing rum-soaked raisins and dark chocolate while retaining enough citrus and oak structure to keep the whisky from becoming overly sweet. This is the heavyweight expression of the Sherry Collection and a particularly interesting release for drinkers who favor deeply sherried, mature Highland malts.
